Kefir contains 30โ50 distinct microbial species vs yoghurt's typical 2 starter bacteria. The community includes multiple Lactobacillus species (L. kefiri, L. acidophilus, L. rhamnosus), Lactococcus, Leuconostoc and multiple yeast species (Saccharomyces cerevisiae, Kluyveromyces marxianus). A 2022 Stanford University randomised controlled trial found high-fermented food consumption (including kefir) significantly increased microbiome diversity and decreased 19 inflammatory proteins over 10 weeks.
A meta-analysis of 9 clinical trials (2020) found fermented milk consumption (particularly kefir) reduced systolic blood pressure by approximately 3โ4 mmHg โ clinically meaningful at a population level. Commercial kefir in Australia is typically 0.08โ0.5%. Relevant for: pregnant women (alcohol-free status not guaranteed), people on disulfiram (Antabuse) or metronidazole (Flagyl), and people avoiding alcohol for religious reasons. Check labels and fermentation time โ longer-fermented kefir has more alcohol.
Despite fermentation reducing lactose significantly, kefir still contains approximately 3.4g of lactose per 100ml. People with severe lactose intolerance may still experience mild symptoms. However, many with moderate intolerance tolerate kefir better than fresh milk due to both reduced lactose and live bacterial lactase production. Introduce gradually to assess personal tolerance.
Kefir contains live bacteria and yeasts in very high numbers (~10โทโ10โน CFU/ml). For immunocompromised individuals (people on immunosuppressive medications, chemotherapy patients, those with HIV/AIDS or organ transplants), consuming large quantities of live yeast-containing foods carries a small theoretical risk of opportunistic infection. Available from online communities, farmers' markets and some health food stores. Commercial kefir (from dried starter cultures): typically 5โ10 standardised strains, more consistent flavour, negligible alcohol. Available at all supermarkets. Both are beneficial; traditional grain kefir provides more microbial diversity.
Drink plain: 200โ250ml as a breakfast drink or evening snack. Smoothie base: blend with frozen banana and berries. Overnight oats: replace milk or yoghurt with kefir. Salad dressings: thin with olive oil, season with garlic and herbs. Pancake batter: replace buttermilk with kefir for fluffy, probiotic pancakes. Marinating meat: kefir's acidity tenderises protein effectively.
Add 1โ2 tablespoons of kefir grains to 500ml of full cream milk at room temperature. Cover loosely (allow COโ to escape). Leave at room temperature 18โ24 hours. Strain through a plastic sieve (not metal โ metal ions can damage grains). The strained liquid is kefir; return the grains to fresh milk immediately for the next batch. Kefir grains multiply and can be shared. Home kefir contains more live cultures and costs only the price of milk.

Kefir keeps longer than fresh milk due to its acidity. The slight separation and carbonation when opened is normal โ shake gently. Home-made kefir: refrigerate to slow fermentation and use within 7โ14 days. An increasingly sour smell is normal; pink, black or green mould indicates contamination โ discard.
Live kefir grains must be kept in fresh milk in the fridge (changing milk every 5โ7 days). For long-term storage: freeze in fresh milk in a zip-lock bag โ grains survive freezing and can be revived in fresh milk. Do not use metal containers or utensils with kefir grains.
